Morning sunshine and happy Friday!! I’m coming at ya today from sunny Indiana. I’m actually here to visit Antique Candle Co and learn all about how their candles are made. How cool is that?! I’m pretty darn excited about it and I’ll definitely share more with you guys soon. But today I wanted to pop in quick to share my mom’s recipe for the best cauliflower pizza crust. I shared this pizza the other night on IG stories when my mom was over for pizza night and SO many people asked about it. So I begged my mom to share her recipe with me and here it is! You guys, this pizza is seriously SO good and it basically has zero carbs, which is great if you’re on a low-carb diet. Also great if you like delicious food. Either/or.
The Best Cauliflower Pizza Crust
Pre heat oven 425. This recipe makes one 12″ pizza.
- one bag (16 ounce) of raw cauliflower rice (pearls)**
- 2 tsp oregano (optional)
- 2 eggs -beaten
- 1 cup hard cheese shredded. (I use half Pecorino Romano & Asiago). These are salty cheeses and brings great flavor to the crust.
**You can grate your own cauliflower with a cheese grater. You will need two cups of chopped cauliflower for one crust.
Start by chopping the cauliflower rice in a food processor for a few seconds to make the kernels smaller. Do one half of the bag at a time. Then place the finely chopped cauliflower rice (CR) in a large skillet. Add oregano at this time. Cook on low and stir often to slowly get the moisture out of rice. This process can take 30 minutes or until you see a small amount of steam rising from the pan.
When finished, place steamed CR in a bowl and allow it to cool completely. Stir occasionally to cool CR faster. Once cooled, add eggs and shredded cheese. Mix well!
Place parchment paper on a pizza pan and put the “dough” on the pan in a ball. Slowly pat out to desired size. Try to make it as uniform as possible across your pan. (I like the crust thin and it cooks faster that way too!)
Then place the dough in hot oven (425 degrees) for 30 minutes. Check crust for brown edges when timer is up. If not browned, leave in the crust in the oven another 5 minutes and check again. Do this until your crust has a nice brown coloring all over.
Take the cauliflower crust out of oven and add pizza sauce and toppings! Place back in the oven until cheese is melted and brown, usually about 10 minutes or so. You can also double this recipe for two pizzas!
Tip: Do not take the cooked pizza off the parchment paper. Just cut the pizza and enjoy!
This cauliflower pizza crust is a great alternative to traditional pizza and my entire family LOVES it. Even the kids love it. And I have to give credit to my mom because she’s spent a lot of time perfecting this recipe over the past few months. I think she finally nailed it and I’m so excited to share it with you guys.
