My Favorite Pumpkin Bread Recipe

Well it’s almost September, which means fall has officially arrived. We’ve actually had a cool and rainy week around here. In fact, as I type this post we’re getting a lovely little morning rain shower. Fall is definitely in the air! So I thought now would be the perfect time to share my favorite pumpkin bread recipe. This isn’t one I came up with, my mom actually found it a couple years ago and shared it with me. But it’s SO GOOD. It’s not the healthiest pumpkin bread out there, but it’s delicious. And it makes two giant loaves. Happy baking!!

THE BEST PUMPKIN BREAD

(recipe makes two loaves!)

Mix together:

5 large eggs

1 15oz can of 100% pumpkin

1/2 cup light olive oil

1/4 cup butter melted

1/2 cup dark brown sugar

1 tsp vanilla

In a separate bowl mix:

2 cups flour

1 cup white sugar

1 5.1oz instant vanilla pudding

1/2 tsp baking powder

1 tsp baking soda

1/2 tsp sal

1 tsp cinnamon

1/2 tsp nutmeg

Combine the wet ingredients, then slowly mix in the dry ingredients. Pour into two loaf pans. Sprinkle with cinnamon and sugar on top before baking! Bake at 325 degrees for 60-70 mins.
